Description :
Job purpose
Provide technical expertise in the beginning stages of the mushroom growing process. It is paramount that the Cook personnel be conscious of maintaining a strict adherence to the five steps of batch production:
1. Mixing the ingredients according to recipe2. Properly Sterilizing the substrate3. Properly Cool-Down the substrate4. Properly Inoculate the substrate5. Successfully Bag-Off the substrate6. Complete Preventative Maintenance
Duties and responsibilities
Accurately record each step of the production process
Perform and oversee the process of cooking the substrate, sterilizing with steam for correct temperatures, pressure and time.
Maintain the correct Temperate and Pressure of the mixer during entire Sterilization and Cool-Down
Follow Production Schedule and Recipes
Properly perform all scheduled Dry Cooks
Perform/schedule maintenance on all equipment as needed
Responsible for proper inoculation of the batch.
Prepare to Bag-Off the inoculated substrate
Ensure the proper Spawn is taken out of the Cooler on the scheduled day per the Production Schedule
Properly Break Spawn prior to Inoculation
Properly manage Sawdust piles
Successfully work with the Microbiology Department
Occasionally perform other duties as assigned by the Batch Cook Supervisor, or the COO.
Pay scale: $22- $25/hour
Job Type: Full-time
Pay: $22.00 – $25.00 per hour
